TRADER JOE'S MEALS EPISODE 46: Balsamic Steak Tips w/ Honey Roasted Carrots & Mashed Potatoes

Heat oven to 425 F. Toss carrots in olive oil, a pinch of salt and pepper on a sheet pan. Toast for 20-25 minutes or until tender. Meanwhile, heat frozen mashed potatoes in a saucepan over medium heat, stirring regularly until warmed through. Add butter, heavy cream and a large pinch of salt and pepper. Mix well and season to taste. In a cast iron skillet, cook steak tips in 2 tbsp olive oil for about 2 minutes each side or until cooked and slightly pink in the middle. When carrots are done roasting, toss them in honey and a sprinkle of flakey sea salt. Serve steak tips over mashed potatoes with carrots on the side. Enjoy!
