Caramelized Onion Chicken Skillet
20 mins prepServes 4
A comforting skillet meal featuring caramelized onions, seared chicken breasts, and a rich beef broth sauce, all topped with gooey Gruyère or mozzarella cheese, finished in the oven. Perfect for a fall dinner.
Preheat oven to 400°F. Melt 2 tbsp butter in a large skillet over medium-high heat. Add sliced onions and ¼ cup beef broth. Cook for 15–20 minutes until golden and softened. Pound chicken breasts to an even thickness (about 1 inch) and season with thyme, salt, and pepper. Remove onions from skillet. Add 1 tbsp butter and sear chicken for 5 minutes per side. Set aside. Mix ¾ cup beef broth with 1 tbsp arrowroot powder. Return onions to skillet, add broth mixture, and stir for 2–3 minutes until thickened. Add chicken back to skillet, spoon onions and sauce over top, and sprinkle with shredded Gruyère. Bake for 8–10 minutes, or until chicken reaches an internal temperature of 165°F. Enjoy!
