This easy sheet pan dinner is healthy & delicious. The marinade is really key in this one so don't skip it! This recipe features beef shish kabobs and roasted potatoes, cooked together on a single sheet pan for a convenient and flavorful meal.
1. Cut steak into chunks.
2. In a bowl, mix all marinade ingredients: coconut aminos (or soy sauce), oil, balsamic (or red wine) vinegar, lemon juice, minced garlic, dried oregano, dried basil, and pepper.
3. Pour half of the marinade mixture into a ziplock bag with the steak chunks. Marinate in the refrigerator for 3-6 hours or overnight.
4. When ready to cook, preheat oven to 400F (200C).
5. Cut baby potatoes in half and coat them with olive oil and seasonings of your choice (e.g., garlic salt).
6. Spread the seasoned potatoes on a sheet pan and bake for 20 minutes.
7. While the potatoes bake, chop bell peppers and red onion, and slice zucchinis. Place these vegetables in a ziplock bag and coat them with the remaining marinade mixture.
8. Don't forget to pre-soak your wooden skewers to prevent them from burning in the oven.
9. Assemble the skewers, alternating between marinated steak chunks and marinated vegetables.
10. After 20 minutes, remove the sheet pan with potatoes from the oven. Move the potatoes to the edges of the pan.
11. Arrange the assembled skewers in the middle of the sheet pan.
12. Return the sheet pan to the oven and bake for an additional 20 minutes for medium-cooked steak.
13. Serve immediately and enjoy!
