20-MINUTE MEALS EPISODE #9: Al Pastor Tacos✨

This easy 20-minute meal packs all of the flavor 😋 The key here is using ground pork instead of roasting a whole pork shoulder 👏🏽 It pairs perfectly with Mexican rice or street corn!
Toast half of the pineapple in a pan over medium heat until browned on all sides. Set aside. Increase heat to medium-high and add the ground pork. Mince and cook until browned all the way through, about 5 minutes. While pork cooks, add the other half of the browned pineapple to a food processor or high-speed blender with achiote paste, chili powder, minced garlic, garlic powder, dried oregano, ground cumin, salt, chipotle peppers in adobo sauce, and white vinegar. Blend until smooth. Once pork is fully cooked, add the sauce and reduce heat to medium-low. Cook until the sauce thickens and begins to caramelize, about 4-6 minutes. Cut the second half of the pineapple into bite-sized pieces and add to the finished pork. Serve with warm tortillas, diced onion, salsa verde, cilantro, and lime wedges. Enjoy!
